Casearia di Sant Anna is a producer of organic Parmigiano Reggiano in the area around Bologna. In total 750 cows take care of the production of the milk . The original Parmigiano Reggiano is made in a new cheese factory, according to a consortium recipe.

Salvatore Tozzi was born in 1950 in Naples. After school he taught all about the preparation of mozzarella. His love for the profession at the age of twenty he took with him to Holland. He refined the traditional method of preparation and now proudly serves the best mozzarella in the Netherlands.
